Makes 3 cups
3 egg yolks
1 – 2 teaspoons lemon juice
½ teaspoons salt
Pinch of cayenne
4 oz butter, melted
Place the yolks, lemon juice, salt, and pepper in a blender and mix for 30 seconds. Then with the blender running, add the melted butter in a steady stream.
