Nutella Banana Crepes

Making your own Hazelnut Spread is easier than you think and it is sure to impress. Pair these crepes with coffee, espresso or even a mimosa and start your morning off right. If you’re feeling fancy, decorate your breakfast tray with a few flowers petals! This recipe makes 8-10 crepes so there will be plenty for you to indulge as well. Enjoy and Happy Valentine’s Day!
Nutella Banana Crepes

1 cup milk
½ teaspoon salt
1 teaspoon sugar
1 cup flour
unsalted butter for the pan
Chocolate Hazelnut Spread
1 cup hazelnuts, toasted
1 cup semi-sweet chocolate chips
¾ cup heavy cream
2 bananas, thinly sliced
For the hazelnut spread:
Put the hazelnuts into a food processor and process until finely ground.
Put the chocolate chips and cream into a microwave safe bowl and microwave on high for 1minute. Remove and stir well until smooth.
Pour the chocolate mix into the food processor along with the ground nuts and process again until well mixed.
Use immediately or store refrigerated in an airtight container. Warm before using.
For the crepes:
In a medium bowl, whisk together the eggs and milk. Whisk in the salt, sugar and flour and set aside for 30 minutes to let the batter tenderize. In a nonstick 8-inch skillet, melt about ½ teaspoon butter over medium heat. When it foams, pour or ladle in about 2 tablespoons of batter. Lift and swirl the pan so the batter coats the bottom. Replace the pan on the burner and cook just until set and the underside is lightly browned. Using a spatula or your fingers, flip and cook until the other side is lightly browned. Transfer to a platter. Repeat until the batter is used up. One by one, spread each crepe with 1 tablespoon of the warmed hazelnut spread and several banana slices. Fold in half and then in half again, forming a triangle. Dust with powdered sugar and serve right away. Makes 8 – 10 crepes.
